I was searching for the best BBQ side dishes you can make and Leonard Botello IV‘s Truth Tater Tot Casserole Recipe one popped up and its been a staple since. Truth BBQ made Texas BBQ Monthly top BBQ list an Just like the homemade baked beans recipe this is a crowd pleaser. This recipe is curtesy of Inside Hook. Pretty easy to make and as always if you don't have room in the smoker it is great in the oven.


Enough of the Bone on to the Meat!


The Recipe!

Ingredients:

  • 1/2 lb butter, melted

  • 1 can cream of mushroom

  • 6 cups shredded cheddar cheese

  • 2 1/2 tsp Cajun seasoning ( I sub Cajun for Soul Food Seasoning from Food Lion and also add smoked paprika)

  • 2 cups of sour cream

  • 1 can of rotel (I use the fire roasted kind)

  • 1 cup white onion, diced

  • 1 cup bacon, diced, rendered

  • 1 bag frozen tater tots ( the picture above is of tater rounds but shredded works as well. For whatever reason Tater Tots have been hard to come by at my local grocer)

Instructions:

  1. Bake tater tots per directions and mix with all ingredients and four cups of cheese.

  2. Pour into a casserole dish and bake at 350 degrees until bubbly. (About 30-40 minutes).

  3. Top with remaining cheese and cook an additional 15 minutes, using the broiler for the last five minutes or so to get a nice browned top.

  4. Let cool slightly before serving in order to let the casserole set up a bit.
